I went to a get together at a friend’s house on Saturday night. The host, Steve was providing pizza for everyone but I wanted to bring a dessert to share as well. With a teenager and a toddler in tow, I don’t have a lot of spare time and I’m not really much of a baker.
I rustled through my mind for an easy dessert that was also on the cheap side but could also provide enough for a crowd. Then it dawned on me. My Pineapple Marshmallow Bites! These are super easy, bake quickly and you can make a few if it’s just for your family at home or double or triple the recipe for a crowd. Perfect! See instructions below.
Pineapple Marshmallow Bites:
Canned pineapple slices. Not chunks. Get the slices that look like rings.
Mini marshmallows
Ground cinnamon
Instructions:
Preheat the oven on broil. Spray a baking sheet with nonstick spray. Lay out the pineapple slices on the baking sheet in a single layer. Fill the center of each slice with several mini marshmallows. Sprinkle the cinnamon over each piece. Broil for a few minutes until the marshmallows are starting to get golden brown. Serve and wait for the compliments to roll in!

Thanks. I’ve made this a number of times and it’s a hit every time…excpept the first time i made it when I underestimated the power of the broiler and burnt the marshmallows!
